My name is Kathy Welsh and I’m a diet-a-holic.

I am also a recovering Californian so, of course, have spent most of my life trying out one new eating plan after another.  I’ve crammed cabbage, slurped soup, cleansed masterfully, and zoned out.  High carb, low carb, all-protein, no protein… you name it, I have experimented with it.  I had varying degrees of success – if success is measured in terms of weight loss and increased energy – but was never really able to stick to anything for the long term.

Until now.  *Cue dramatic music*

My first “Aha! moment” happened about two years ago, after I saw the movie Food, Inc..  Have you seen it?  Do it!  Go watch it on your Netflix instant play!  Right after you finish reading this, of course…!  Well, shortly thereafter I saw Forks Over Knives, and… oh my….  As a huge animal lover*, these movies really jolted me into reality.  Once I read the books Eating AnimalsThe Kind Diet, and THEN The Engine 2 Diet, I was hooked!  I slowly started eating less meat and integrating more plant-based meals into my life. Before I knew it I was craving healthy, whole foods more and more.

And – you know what i’m going to say next – I’ve never felt better!  I finally realize that there is a big difference between being fed and being nourished.  I’m not a vegan, and I may never be!  But by eating more mindfully, my body has become more balanced and I have more energy than I’ve had in a llllllllllong time.  I’m in my 50s and I feel awesome!

I’m starting this blog to show you that you don’t have to be rich or famous, a chef, or even a hippie to benefit from incorporating more plant-based food into your life. Anyone can do it – a salad here, a side of quinoa there… those little nutrient-dense additions go a long way.  And I’m not saying you have to give up meat!  I just want to share the tips I’ve picked up along my journey and show you how easy, economical and delicious vegan foods can be.

I will be posting recipes, healthy hints and real stories about a real person just trying to feel real good every day.  It’s going to be fun!
