Food on the Fly Day Friday!

It’s Friday, people!  Whooooo hoooooo!  It’s been a long week, so this is gonna be QUI(C)K!

You won’t believe how QUIK you will bang out this amaaaaazing quinoa dish I made this past week!  It’s like a mock fried rice kinda thing… omg… SO YUM!!  I make a bunch of quinoa ahead of time and store it in the fridge and then just cook this “to order”, which literally takes just a few minutes.  Aside from being delicious, quinoa is super-healthy!  If you want to edumakate yourself, check out this link.  Okay, enough chit chat…  Here we go, yo!

Don’t Cry For Me, Whole Grain Quinoa

1 cup cooked quinoa (*check out the directions below)

1-2 tablespoon low sodium soy sauce or tamari

1-2 cloves of garlic, minced

1 cup of frozen or fresh veggies such as peas, carrots, and onion

S+P to taste

Veggie broth for sautéeing

Drizzle (for your nizzle) of sriracha

Sauté onion, and carrots – and any other veggies you want – until al dente.  If you’re using peas, put them in last – because they cook so QUIK!  Heeheee.  Okay, once peas are warmed add the quinoa, and then the garlic and soy sauce (or tamari) to taste. Super easy and super delicious.  And… uh huh… super QUIK!

*To cook quinoa – Rinse one cup of quinoa with water, drain thoroughly, then transfer to a pan.  Toast the quinoa on the stovetop (this makes it fluffier!), add 1 1/2 cups of water, bring to a boil, then lower the heat to low and cook for about 12 minutes.  Fluff it with a fork and you’re ready to rock.
