It’s Ferris Buel… Umm… I mean… It’s Kathy Welsh’s Day Off!
And Wednesday Cleanse Day!

Well, with the exception of my sports fanatic husband, everyone I know will only care about three things this Super Bowl Sunday: commercials, Madonna, and food.
The Material Girl is certain to put on quite a show, but I’m pretty sure my table of Super Bowl snacks will be getting most of the attention! I’m making “healthified” versions of my favorites (recipes to come on Fast Food Friday!), but even with vegan/vegetarian/natural options, I will still probably eat more than I usually do and take in a lot more calories. It’s hard not to, right?! Well, before you throw me a penalty flag, let’s get in a huddle so I can share my defensive strategy: I’m going to lighten up my intake BEFORE the party! That’s right! No tortilla chip is going to sack this quarterback!
For two days – today and tomorrow – I am going to have my usual breakfast of a smoothie or oatmeal, and then eat from a big pot of a delicious, nourishing and satisfying soup for the remainder of the day. I’ll incorporate a couple of pieces of fruit – maybe an apple and a Cutie tangerine –
and, of course, take my green food capsules to make sure I’ve got the whole nutritional field covered. *No Hail Marys necessary!* By the time the weekend rolls around, I’ll be ready to sprint to the end zone – or the snack table!
Kathy’s Lighten-Your-Tail(gate) Super Soup
- 4 cups low sodium vegetable broth
- 2 garlic cloves, minced
- 1 tablespoon tomato paste
- 2 cups chopped cabbage
- ½ yellow onion
- 2 chopped carrots
- 1 cup green beans (I use frozen organic)
- 1 cup chopped zucchini
- 1 tablespoon Italian seasoning or fresh basil and oregano- ½ T. each
- salt & pepper to taste
Spray pot with non-stick cooking spray, or use a little veggie broth to sauté onions, carrots and garlic for five minutes. Add broth, tomato paste, cabbage, green beans, basil, oregano and salt and pepper. Simmer for about five to ten minutes, until all the vegetables are tender. Add zucchini and simmer for another ten minutes. And then… soup for you!
